Shimla Pinks, Birmingham, has had a £1.2m refurbishment in order to stay at the 'cutting-edge of the UK's Indian restaurant scene'. The 400-cover restaurant, re-designed by Art Environments, now offers a VIP and Club room and 'intimate' pink booths, allowing private dining for parties. One of the main new features of the restaurant is an open plan kitchen where diners can watch chefs preparing meals based on the Dum Pukht method of slow cooking in earthenware pots. The original Shimla Pinks opened in Glasgow in 1988; further branches are now established in Birmingham, Manchester, Nottingham, Leicester and Solihull.
