Chefs getting into hot water

With professional chefs increasingly turning to that particular method of cooking, Cooking Technology and Concepts (CTC) reported a huge degree of interest in its sous vide equipment at Hotelympia.

CTC distributes an extensive range of water baths and thermal circulators from manufacturers such as Roner (Spain) and Polyscience (the USA).

New to the range and launched at the show is 'Expert', a range of unstirred water baths manufactured by Grant. These are available in 12 or 26ltr capacity, with an insulation design which achieves temperature stability of plus or minus 0.2˚C. They are manufactured with stainless steel lid, tank and outer case. The range also includes an economically priced 'Refresh' water bath.

Some chefs prefer a thermal circulator that they can attach to their own pan. The CTC range of thermal circulators includes models from both PolyScience and Roner.

Each works by circulating the water and heating it to a preset temperature that never fluctuates by more than half a degree.

The PolyScience model 7306 is the entry level model. This is a portable circulator that can be readily used with any suitable pot as large as 28 litres. High and low circulation speeds are available and it has three pre-set buttons to make the selection of frequently used cooking or thawing temperatures fast and fool-proof.

The digital PolyScience 7312 model stores up to 10 different chef-defined cooking programmes and offers continuously adjustable liquid circulation speeds. It operates with chefs own stockpots and has an adjustable bridge to span cooking vessels from 15-25in wide.

The top of the range in CTC's portfolio is the Roner digital thermostat. Again this may be used with chef’s existing pans, with a maximum volume of 20ltrs. It is microprocessor controlled and has an LCD screen.

For chefs preferring a purpose-built water bath with built-in thermal circulator, CTC offers the Roner Compact. This is a 20ltr capacity stainless steel bath with the added function of a countdown timer and closed water circulation system to guarantee the temperature stability.

As the name suggests, it measures a compact 480mm in width.
